In the winter months, I love to take out my panini press and experiment with sandwiches. One of my favorites thus far is the Oven Roasted Turkey Guacamole and Bacon Panini. If you haven’t caught on, I am all about quick and convenient recipes. For those nights you’re pressed for time, this is the perfect go-to recipe. With only a few ingredients, these paninis can be grilled in no time and they’re healthy. Pair it with a cup of soup and I promise the family will be asking for seconds!

Years ago, we bought the Cuisinart 5-in-1 Griddler and it quickly became a favorite in our house. The best part, it works as a contact grill, panini press, full grill, full griddle and half grill/half griddle. Imagine all the possibilities. Above all, you can trade out the cooking plates for waffle plates!!! You read that right, WAFFLES!

To make these paninis you’ll need a loaf of sourdough bread, pepper jack cheese, oven roasted turkey breast, turkey bacon, chunky guacamole, and butter.

Start by turning your panini grill to medium. While the panini press is preheating, cook your turkey bacon in a pan over medium heat until lightly browned. I chose to use turkey bacon because it’s healthier and I personally like the taste of it.

While the bacon is cooking, slice the sourdough bread so that each slice is about 1/4-1/2 inch thick. Next, butter the outside of each piece of bread. Trader Joes’ has Balade Light Butter with Sea Salt and it’s only 60 calories per serving (regular butter is 100). It’s really tasty and has a hint of sea salt.

Now begin building your panini by taking your first piece of sourdough and add the pepper jack cheese, next the bacon, then the turkey.

Lastly, spread a good amount of guacamole on the inside of the second piece of sourdough. Trader Joe’s for the win again – they have this AMAZING Chunky Guacamole that’s made with Greek Yogurt (50% less fat & 40% less calories than regular guacamole).

Carefully, place the panini on the press and cook for about 5 minutes.

Serve with a side of arugula or a cup of soup. Enjoy!

*Sometimes I feel like kicking it up a notch and I’ll drizzle some chipotle ranch on my panini before cooking.

  • Balade Light Butter with Sea Salt
  • Oven Roasted Turkey Breast
  • 4 slices Pepper Jack Cheese
  • 2 slices Turkey Bacon
  • Trader Joe’s Chunky Guacomole

Directions:

Turn your panini grill to medium. Next cook your turkey bacon in a pan over medium heat until lightly browned. Slice sourdough bread and butter outside of both slices. Assemble the panini: bread, cheese, bacon, turkey, guacamole, bread. Grill for about 5 minutes.
